
While perusing our pantry for an afterschool snack, P discovered I had not one, not two, not four, but SIX (half-used) boxes of brown sugar!! So she did a Google search for Brown Sugar recipes. (Her first search was "Human treats with brown sugar" -- I asked why and apparently there are numerous dog treat recipes.:))
The only criteria for the recipe was that we had to have all the ingredients already.. no going to the grocery store.
She found this one for Brown Sugar Pound Cake from Cooking Light.
The only thing we didn't have was vanilla. Not sure what a difference that would have made. Other than the mixer part, P was able to follow the whole recipe without too much help. The result: Pretty darn good. The cake was dense, not too dry and not terribly sweet, but for the confectioners sugar dusting on top. (I have about three boxes of that in the pantry too.. such proof that I rarely bake and when I do, I go to the store and buy ingredients I already have.)
